Pesto Veal Burgers on Focaccia
1 slightly beaten egg white
1/2 cup soft bread crumbs
1/2 tsp. salt
1/8 tsp. pepper
1 1b. round veal
1/4 cup light mayonnaise dressing
1 tbsp. pesto
8 3-inch squares of focaccia bread or 8 slices sourdough bread
4 lettuce leaves
4 tomato slices
4 red onion slices
In a medium bowl combine egg white, bread crumbs, salt, and pepper.
Add ground veal; mix well.
Shape mixture into four 3/4 inch-thick patties and sprinkle with leaf rosemary.
Grill burgers for 14 to 18 minutes or until meat is no longer pink turning once halfway through grilling.
In a small bowl combine mayonnaise and pesto.
Serve burgers on toasted focaccia bread with sauce, lettuce, tomato and onion slices.
